Our hill top estate lies in the heart of the D.O.C. area in the heart of the Tuscan Maremma, where most prized Tuscan olive oil is made.
We produce an extremely fine Extra Virgin Olive Oil, which is the result of a first cold press production. This Extra Virgin Oil comes from the fruit of our 437 mature trees and has a beautiful green to golden colour.
Our production still follows traditional methods which is nowadays very rarely found. As small producers we put all our efforts and resources in the production of our products. The care for our olive groves culminates in the meticulous selection of our best Frantoio, Coreggiolo, Leccino, Pendolino and Moraiolo olives in late October early November when they are generally at optimum ripeness.
Once the best olives of the season are selected and picked, they are blended in selected proportions, chosen to provide as much as possible the desired flavours for our varieties. They are then immediately pressed, allowing the oil to maintain an extremely low acidity.
The great care taken in the production of this Extra Virgin Olive Oil, in excess of the already strict P.G.I. standards, results in an exceptional oil. As an artisanal product, the blend of olive varities results
in different flavours, only by blending our olive varieties
in different ways.
We have Extra Virgin Oils which offer a more fruity flavour
with lighter spice and peppery notes, some others are
more full bodied with enhanced spice and peppery notes.
The fresh bite and the peppery finish is the typical
feature of fine Tuscan olive oils, appreciated worldwide.
All of Extra Virgin Olive Oils are high quality products,
nowadays rarely to be found, beautiful to taste and use
on a daily basis.
